Ice Cream Flower-wiches

INGREDIENTS

  • 16 flower-shaped vanilla wafer cookies
  • 1 pint (tub) Ben & Jerry’s ice cream or Non-Dairy, any flavour

  • 12 oz. white chocolate (not chips), chopped
  • 2 tablespoons canola, vegetable, or coconut oil
  • 8 skewers
  • Toppings of your choice, such as royal icing, colorful candies, or nuts
DIRECTIONS
  1. Place the cookies on a sheet tray lined with wax paper, bottom side up.

  2. Place small ¾-ounce scoops of Ben & Jerry’s ice cream on 8 of the 16 cookies.

  3. Top each of the ice cream scoops with another cookie, sandwiching a skewer into the ice cream.

  4. Freeze for at least 30 minutes.

  5. Place the chopped white chocolate in a tall microwavable glass and melt in the microwave at 50% power in 30 second increments, stirring in between until melted.

  6. After they have set in the freezer for at least 30 minutes, hold each sandwich by the skewer and dip it into the melted chocolate. Let the excess chocolate drip off, and then place it on a wax paper-lined sheet tray. Freeze again for at least 30 minutes

  7. Remove from the freezer. Decorate the flowers with royal icing, candies, nuts, and other decorations as desired.

  8. Enjoy! Store any uneaten flower-wiches in the freezer.
